All supermarkets are trying to cash in with fake sourdough. I am an artisan baker and I bake sourdough from s 20-year-old Sanfransisco bakery starter. Proper sourdough with a wild sourdough starter ferments very very slowly. Although I am not caeliac I do have a sensitivity to wheat/gluten but can tolerate sourdough bread. I have found that this bread does not cause a reaction like normal bread. I enjoyed the texture and full flavour the sourdough gave to my toasted bread. I have had a couple of loaves now and the whole family enjoy it. Look forward to trying versions by other bakers to compare.
